Steak au Poivre
(traditional sauce recipe)
Preparation Time: 2 minutes
Makes 6 servings
Cook
Time: 12-22 minutes
Place meat on a broiling pan and cook 3” from heat source and cook for
12-18 minutes for rare, 18-20 minutes for medium and 20-22 minutes for
well done, turning once.
Remove steaks from pan. Place pan on stove over high heat add butter and
mushrooms and sauté. Add Steak au Poivre seasonings and flour, stirring
well.
Add Brandy, make sure to stir well and
scrape sides of pan. Add bouillon cube or salt if desired. Add broth and
cream while continuing to stir. Bring to a boil while stirring
occasionally and cook until it thickens and reduces quantity by ¼ to ½.
Pour over steaks and serve.
