Cook Time: 15 Minutes per rib or 5 minutes per pound of boneless trimmed
meat.
A 2 rib roast should weigh 5-6 pounds. FOLLOW TIME
EXACTLY AND DO NOT OPEN OVEN DOOR DURING COOKING TIME
Bring roast to room temperature. Preheat oven to
500°
Place roast in a shallow roasting pan. Rub a little flour lightly into
the fat and sprinkle seasoning on all sides of meat. Flour will help
with splattering.
Roast for 30 minutes exactly for rare and 45
minutes for medium. When cooking is done, turn oven off,
BUT DO NOT OPEN THE DOOR.
Allow roast to remain in the oven for at least 1 hour or until the oven
is lukewarm, approximately 2 hours.

3 ribs approx 8-9 pounds 40-45 minutes rare , 65-70 minutes for
