Pot Roast

Prep Time: 15 minutes Makes: 6 servings
Cook Time: 2-12 hours depending on cooking method

  • 1 med. Onion
  • 6 med. Baking Potatoes cut in 1" pieces
  • 6 med. Carrots, cut in 1" pieces
  • 2 stalks Celery, cut in 1" pieces
  • 2 Tbsp. Cornstarch
  • 1/2 cup Water
  • 1 can Cream of Mushroom Soup (low sodium)
  • 1/2 cup Red Wine (Lambrusco soft red), water or beef broth
  • 3-5 lbs. Chuck Roast
  • 2 Tbsp. Healthy Solutions Beef Rub (formerly Prime Rib Rub)

SLOW-COOKER DIRECTIONS: In a 5 or 6 quart Slow-Cooker place prepared vegetables on bottom, add cornstarch and stir to coat vegetables.

Add water, soup and wine. Coat meat well with seasonings on both sides. Place on top of vegetables. (Leave the meat on top, vegetables will take longer to cook). Cover and cook on low for 10-12 hours or on high for 6 hours.
