Peppercorn Steak
or Roast

Makes: 6 servings
Cook Time: 12-22 minutes
- 1 lb. Sirloin Steak (or your favorite cut of
beef or game meat) 1" thick
- 2 Tbsp. *Not
Just for the Halibut
- Salt to Taste
*For milder flavor begin with half the seasoning
then adjust as desired.
Sprinkle and gently press seasonings on both sides of meat.
GRILLING DIRECTIONS: Grill over medium coals, turning once. Cook
4-8 minutes for rare, 10-14 minutes for medium, 16-20 minutes for well
done. Remove from heat and let stand for 5 minutes. (Internal
temperature will continue to rise 5-10 degrees.
BROILING DIRECTIONS:
Place meat on a broiling pan and cook 3” from heat source for the same
amount of time as above.
ROAST BAKING DIRECTIONS:
Prepare meat with seasonings. Preheat oven to 425°. Place roast fat side
up in a roasting pan. Bake for approximately 10-15 minutes per pound or
until meat thermometer reads desired temperature.
