Lemon Pepper Haddock/Scallops (Cod, Grouper or
Hake) or Chicken
Preparation Time: 5 minutes
Makes 6 servings
Cook Time: 12-15 minutes

1 1/2 lbs. Haddock, Scallops, Cod, Grouper,
Hake or Boneless Chicken Breast

3 to 4-1/2 tsp.
Lemon Pepper Seasonings

2 Tbsp. Butter - cut into
thin slices
Preheat grill, oven or
broiler. Spray medium sized casserole dish with a non-stick
cooking spray. Place fish or chicken in dish, sprinkle seasonings
on both sides, add butter.
Cooking directions will depend on cut and
thickness.
GRILLING DIRECTIONS:
Use a disposable aluminum foil pan. Place on lower rack of grill
on medium heat for 12 –15 minutes.
BROILING DIRECTIONS:
Place dish 2-4” from heat source and cook for 12-15 minutes turning
once.
BAKING DIRECTIONS:
Preheat oven to 350° (chicken can be up to 400°). Place fish or chicken
in shallow pan and bake uncovered for 15-22 minutes or until fish flakes
easily or is opaque, (chicken until no longer pink and juices run
clear).
CHICKEN MARINADE RECIPE: Combine 1/2 cup of oil, 1 Tbsp. water, 1
Tbsp. of vinegar and 1-1/2 Tbsp. of Lemon Pepper Seasoning; add chicken.
(If time permits, marinate for 1 - 24 hours).
Another option; use Italian Salad dressing and 1-1/2 Tbsp. of Lemon
Pepper Seasoning.
