Crispy Chicken Strips

1-1/2 lbs. Boneless,
Skinless Chicken Breasts (approx. 3 half breasts) or pork chops
·
4-1/2 Tbsp. Mayonnaise
or Yogurt
·
2 Tbsp. Parmesan
cheese-grated
·
1 Tbsp.
Encrusted Haddock Fillets
·
6 Tbsp. Whole Wheat
bread crumbs or crushed crackers (approx 9)

Salt to Taste
Preheat oven to
425°.
Cut each chicken
breast into 3-4 strips lengthwise. Blend mayonnaise or yogurt with
cheese and seasoning. Spread mixture on both sides of meat. Place bread
crumbs on cutting board of wax paper; coat chicken.
Bake in preheated
oven for 15-20 minutes or until no longer pink and juices run clear.
