Chicken or Beef Minestrone

 

Preparation Time: 15 minutes Makes: 10 servings
Cook Time: 1-9 hours, depending on cooking method

  • 28 oz. Crushed Tomatoes with Roasted Garlic
  • 8 oz. Frozen Mixed Vegetables (carrots, green beans, peas & corn)
  • 15 oz. Kidney Beans or garbanzo Beans
  • 2 stalks Celery - diced small
  • 1 med. Onion - diced small
  • ½ lb Beef or Chicken - cut in small cubes
  • 1-1/2 Tbsp. Italian Meatballs
  • 1 Beef or Chicken Bouillon Cube
  • 14-20 oz. Beef or Chicken Broth
  • ¼ lb Small Pasta, cooked (ex: shells, elbow macaroni or orzo)

 

CROCK POT DIRECTIONS: Place all ingredients in a Crock-Pot except for pasta. . Cover and Cook for 4 to 4-1/2 hours on high or 8 to 9 hours on low. Add pasta just before serving.

 

STOVE TOP DIRECTIONS: Place all ingredients in a medium size saucepan except for pasta; bring to a boil. Reduce heat and simmer covered for approximately 45-60 minutes or until vegetable are tender. Add pasta just before serving.
