Beef Rub
(Roast, Prime Rib or Steak)

Prep time: 5 Minutes               Makes 6 Servings
Cook Time: Varies depending on cut (see below)

Bring roast to room temperature. Preheat oven to 425 degrees. Prepare shallow roasting pan by spraying with a non stick cooking spray or coat with oil. Place roast in pan fat side up. To prevent splattering, rub a little flour on fat before seasoning. Sprinkle seasonings on all sides of meat.

ROAST COOKING DIRECTIONS:
Keeping heat @ 425 degrees, place in oven uncovered 10-15 minutes per pound.

*OPTION 2: Reduce heat to 250 degrees and cook 10-20 minutes per pound.

Using a thermometer, the internal temperatures should read;

Rare 110-120 degrees
Medium Rare 120-130 degrees
Medium 130-140 degrees
Medium Well 145-155 degrees
Well Done 160 degrees

Times will vary depending on size and cut. Internal temperature will continue to rise 5-10 degrees once removed from oven.

STEAK DIRECTIONS: Use 2 teaspoons per pound of meat. Preheat grill or broiler.
Depending on thickness; cook approximately 4-8 minutes for rare, 10-14 minutes for medium and 16-20 minutes for well done, turning once.
